Citrus Cuban Chicken & Shrimp Pineapple Bowls: Best Caribbean Chicken Recipe

What You’ll Need:

For the Protein & Base:

  • 1 lb chicken breast, cubed

  • ½ lb shrimp, peeled & deveined

  • 2 tbsp Hola Island Citrus Cuban Marinade 🍊

  • 1 pineapple (halved & hollowed out)

  • 1 cup cooked jasmine rice (optional)

  • ½ red bell pepper, diced

  • ½ green bell pepper, diced

  • ½ red onion, chopped

  • 3 tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp salt & pepper (to taste)

For the Sweet & Spicy Sauce:

  • ¼ cup honey

  • ¼ cup soy sauce

  • 1 tbsp sriracha or red pepper flakes (optional)

  • 1 cup puréed pineapple

  • 2 cloves garlic, minced

How to Make It:

1️⃣ Marinate for Maximum Flavor

Place chicken and shrimp in separate bowls and coat with Hola Island Citrus Cuban Marinade. Let sit for at least 30 minutes (overnight is even better for deeper flavor!).

2️⃣ Cook the Chicken

Heat 2 tbsp olive oil in a pan over medium-high heat. Add chicken, season with smoked paprika, salt, and pepper, and cook until golden brown and fully cooked (about 6-7 minutes). Remove from pan and set aside.

3️⃣ Sauté the Shrimp

In the same pan, add 1 tbsp olive oil and cook shrimp for 2-3 minutes per side until pink and slightly caramelized. Remove from heat.

4️⃣ Sauté the Veggies

Add diced red and green bell peppers along with chopped red onion to the pan. Sauté for 3-4 minutes until slightly softened but still crisp.

5️⃣ Make the Sweet & Spicy Sauce

In a small bowl, whisk together honey, soy sauce, sriracha (if using), puréed pineapple, and minced garlic. Drizzle over the cooked chicken and shrimp for an extra kick of island flavor!
