Serving Size: 4-6
Recommended Cooking Gear:
-
Oven or Grill
-
Baking sheet
-
Aluminum foil
-
Small saucepan
-
Basting brush
Ingredients Needed:
-
1 rack of baby back ribs (about 3-4 pounds)
-
2 tbsp Hola Island Jamaican Spice Blend
-
1 tbsp Hot chili powder
-
1 tbsp Brown sugar (optional)
-
1/4 cup Cowboy by Choice Spicy Mustard
-
2 tbsp honey
-
1 tbsp apple cider vinegar
-
1/2 cup barbecue sauce (optional)
Instructions:
-
Prepare Your Ribs:
Preheat your oven to 300°F. Remove the membrane from the back of the ribs (if not already done) and pat them dry with a paper towel. -
Season Your Ribs:
In a small bowl, combine the Jamaican spice blend, the spice mustard, hot chili powder, and brown sugar. Generously rub this mixture all over the ribs, ensuring an even coating. -
Bake Low and Slow:
Wrap the ribs tightly in aluminum foil and place them on a baking sheet. Bake for 2.5 to 3 hours or until the meat is tender and begins to pull away from the bone. -
Make Your Glaze:
While the ribs are baking, mix spicy mustard, honey, and apple cider vinegar in a small saucepan. Heat over medium-low until the mixture thickens slightly, then set aside. -
Grill and Glaze:
Preheat your grill to medium heat. Once the ribs are cooked, unwrap them and brush generously with the mustard glaze. Grill for 5-7 minutes per side, basting frequently, until caramelized and slightly charred. If desired, add a layer of barbecue sauce in the final minutes for a saucier finish. -
Serve and Enjoy:
Let the ribs rest for 5 minutes before slicing. Serve with extra sauce on the side and watch them disappear!
Pro Tip:
Pair these ribs with coconut rice, fried plantains, or a crisp coleslaw for a complete Caribbean-inspired meal. And don’t forget a cold drink like a malta or ginger beer to round out the flavors.
