Ingredients Needed:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 6 tbsp cold butter, cubed
  • ¾ cup buttermilk (plus extra for brushing)

For the Spiced Gravy:

  • 1 lb breakfast sausage (pork, chicken, or turkey)
  • 2 tbsp Hola Island Spice Blend
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • Salt & pepper to taste

Instructions:

Step 1: Prepare the Biscuits

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Add cold butter cubes and cut them into the flour using a pastry cutter or fork until the mixture resembles coarse crumbs.
  4. Slowly pour in buttermilk, stirring until a dough forms. Do not overmix.
  5. Transfer dough onto a lightly floured surface. Gently pat it into a 1-inch thick rectangle and cut into rounds or squares.
  6. Place biscuits onto the baking sheet, brush the tops with buttermilk, and bake for 12-15 minutes until golden brown.

Step 2: Make the Spicy Gravy

  1. In a large skillet over medium heat, cook the sausage, breaking it apart until browned.
  2. Sprinkle in Hola Island Spice Blend and stir well.
  3. Add butter to the skillet and let it melt. Sprinkle in flour and cook for 1-2 minutes, stirring constantly.
  4. Slowly pour in milk, whisking continuously until the gravy thickens. Reduce heat and let simmer for 5 minutes.
  5. Season with salt and pepper to taste.

Step 3: Assemble & Serve

  1. Split open warm biscuits and spoon generous amounts of spiced gravy on top.
  2. Garnish with chopped parsley, a dash of extra spice, or hot sauce if desired.
